Ingredients

  • 400 g couscous
  • 400 ml boiling salted water
  • 4 tomatoes
  • 1 cucumber
  • 1 Garlic clove
  • 0.5 tsp Coriander powder
  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 0.5 bunch mint

Instructions

    Pour boiling salted water over the couscous and let it absorb for about 5 minutes. Fluff with a fork and allow to cool.

    Wash tomatoes, cut off stems and slice into rounds.

    Wash cucumber, trim ends and halve lengthwise. Slice thinly.

    Peel garlic and finely chop.

    Combine vegetables in a bowl, season with coriander, salt, pepper, add oil and vinegar, then mix with the couscous. Serve in bowls garnished with sliced mint strips.
