Ingredients

  • 2 Avocados
  • 2 mangos
  • 1 Shallot
  • 1 tbsp freshly chopped parsley
  • 1 pinch sugar
  • Lemon juice
  • Salt
  • pepper (ground)
  • 4 large shrimp (pre‑shucked and deveined, leaving the tail segment intact)
  • 2 tbsp mango juice
  • 2 tbsp olive oil

Instructions

    Peel and pit the avocados and mangos, then dice both into small cubes. Roughly one‑third of an avocado is mashed with a fork. Peel and finely dice the shallot. Mix the parsley into the avocado mash, add the diced avocado and mango pieces. Season with sugar, lemon juice, salt, and pepper. Arrange the salad on a plate using a ring mold if desired.

    Rinse the shrimp, pat dry, and sauté in hot oil for about 2 minutes until cooked through. Season with salt and pepper. Place the shrimp atop the mango avocado salad.
