Couscous Porridge with Peach

A gentle porridge made from couscous and ripe peaches, enriched with rapeseed oil for a subtle beta-carotene boost beneficial for eye health.

Ingredients

  • 20 g couscous (instant; 2 tbsp)
  • 100 g ripe peaches (1 small peach)
  • 2 tbsp apple juice
  • 1 tsp Rapeseed oil

Instructions

    Bring 90 ml water to a boil in a small pot. Stir in the couscous, cover and let it steam for about 3 minutes.

    Wash the peach, pat dry, halve, pit, and roughly chop.

    Combine the peach pieces, apple juice, and oil with the couscous and blend finely with an immersion blender. If the porridge is too thick, add a little more apple juice or water.
