Ingredients
- 300 ml Vegetable broth
- 200 g couscous (instant)
- 1 star anise
- 1 tsp turmeric (ground)
- olive oil
- 1 tbsp lime juice
- Salt
- Pepper (freshly ground)
- 4 Spring Onions
- 200 g Cherry tomatoes
- 1 red chili pepper
- 100 g green grapes (seedless)

Bring the broth to a boil with the star anise and turmeric, then stir in the couscous. Remove from heat, cover and let stand for about 10 minutes to absorb. Fluff with a fork, mix in 2 tbsp oil and lime juice, season with salt and pepper, and allow to cool slightly.

While the couscous rests, wash and trim the spring onions, cutting them into 2–3 cm pieces. Wash the tomatoes and halve them. Rinse the chili pepper and slice it into rings. Wash the grapes and let them drain.
