Coffee Parfait

A fresh dessert featuring coffee and creamy textures, inspired by European flavors.

Ingredients

  • 1 egg
  • 2 yolks
  • 80 ml strong coffee
  • 20 ml coffee liqueur
  • 60 g brown sugar
  • 150 ml whipping cream
  • 1 tsp vanilla sugar
  • cinnamon powder
  • ground cardamom

Instructions

    Separate the egg white from the yolks. Whisk the yolks with coffee, liqueur, and sugar over a hot water bath until creamy. Remove from heat and beat cold. Whip 100 ml of cream stiff and fold into the mixture. Beat the egg whites stiff, fold in, then pour the mousse into four freezer‑proof glasses. Cover and freeze for at least 4 hours.

    About ten minutes before serving, remove the parfaits from the freezer. Whip the remaining cream with vanilla sugar until stiff, place a dollop on each parfait, and dust with cinnamon and cardamom.
