Coffee Parfait

- 2 Eggs
- 2 egg yolks
- 180 g sugar
- 250 ml freshly brewed espresso
- 6 tbsp coffee liqueur
- 500 g whipping cream
- 8 coffee cookies (more if desired)
- 3 tbsp butter

Crush the coffee cookies with a rolling pin. Melt the butter and mix it with the crumbs. In a pot, combine egg yolks, eggs, and sugar; whisk over a hot water bath until creamy and the sugar has dissolved. Stir in the espresso and 4 tbsp liqueur, then let cool.

Whip the cream to stiff peaks and fold into the egg mixture. Add the remaining liqueur to the crumbs and mix. Line a loaf pan with cling film and butter paper. Spoon about one‑third of the parfait batter into the pan. Sprinkle half of the cookie crumbs on top, add another third of the batter, then spread the remaining crumbs and finish with the rest of the batter, smoothing the surface. Cover with film and freeze for about 5 hours until set.

About 30 minutes before serving, place in the refrigerator. Then pour out of the pan, remove the film, and arrange on a plate with coffee cookies.
