Ingredients
- 75 g soft butter
- 50 g sugar
- 1 tsp lemon zest
- 1 egg
- 150 g flour
- 0.5 tsp ground cardamom
- 80 g brown candy sugar
- vanilla sugar (for coating)

Beat the butter with sugar and lemon zest until fluffy. Add the egg and beat again until very fluffy. Sift in the flour and mix quickly with the cardamom. Roughly crush the candy in a mixer or mortar, fold into the dough, cover and chill for 30 minutes.

Preheat oven to 180°C fan. Scoop small portions of dough with a teaspoon, shape into balls and place on parchment-lined baking sheet. Bake for about 12 minutes until golden brown. Remove from oven, immediately roll carefully in vanilla sugar, and let cool.
