Ingredients

  • 0.25 l strong, hot coffee (for 4 servings)
  • 80 g sugar
  • 1 Vanilla bean
  • 100 g whipping cream
  • coffee beans

Instructions

    Stir 70 g sugar with 1/4 l water in a pot, bring to a boil and simmer for 1 minute, then add the coffee. Split the vanilla bean lengthwise, scrape out the seeds and add both to the coffee syrup mixture and let cool.

    Pour the mixture through a sieve into a shallow metal bowl and place it in the freezer for 2–3 hours. Stir vigorously with a fork every 30 minutes to prevent large ice crystals from forming. Give it one final vigorous stir before serving.
