Ingredients

  • 500 g fruit of choice (e.g., oranges, lemons, pineapple rings, cherries, small pears, kumquats, figs...)
  • 100 g glucose
  • 400 g sugar

Instructions

    Wash oranges and lemons thoroughly in hot water and slice them. Pit the cherries. Halve the figs, pears, and kumquats. Place all fruit in a pot, cover with water, simmer for 5 minutes, remove and drain well.

    Whisk the cooking liquid with glucose and sugar, heat to 110 °C, then pour over the fruit. After 24 hours, strain the syrup, reheat to 110 °C, and pour again over the fruit. Repeat this process at least four more times. Finally, drain the fruit and let them dry in a warm place for at least 24 hours.
