Ingredients

  • 1 Spring onion
  • 1 Garlic clove
  • 15 g ginger
  • 3 handfuls herbs (e.g., parsley, chervil, basil)
  • 1 tbsp Olive Oil
  • 150 ml dry white wine
  • 400 ml Vegetable broth
  • 4 cod fillets (≈150 g each)
  • 0.5 lemon juice
  • Salt
  • white pepper

Instructions

    Wash and trim the spring onion, then finely chop it. Peel the garlic and ginger and dice them finely as well. Rinse the herbs, shake dry, pluck leaves, and finely chop.

    Heat oil in a pan and sauté the spring onions, garlic, and ginger until translucent. Deglaze with wine, add broth, and simmer gently for about 5 minutes. Pat the fish dry, drizzle with lemon juice, season with salt and pepper, then place in the sauce and cook covered over low heat for about 5 minutes. Taste the sauce and serve.
