Cod with Cream Sauce

Ingredients
- 600 g mixed vegetables (bell pepper, carrots, zucchini etc.)
- 600 g cod fillet
- 2 tbsp lemon juice
- Salt
- pepper (ground)
- 2 tbsp butter
- 1 tbsp butter
- 1 tbsp flour
- 200 g whipping cream
- 200 ml milk
- 2 tbsp mustard
- sage leaf for garnish

For the sauce, foam the butter in a small pot, stir in the flour and cook until pale. Pour in the cream and milk, bring to a boil while stirring, add the mustard, and simmer for about 15 minutes; season with salt and pepper.

Wash, trim, and if necessary peel the vegetables, then cut into long thin strips or shave them. Cut the cod fillet into portions, drizzle with lemon juice, and season with salt and pepper. Fry the fish pieces in hot butter in a pan for about 2–3 minutes per side. Blanch the vegetable strips in boiling salted water for 1 minute, drain and let dry.
