- 4 cod fillets (≈160 g each)
- 6 sprigs Basil
- 4 sprigs Parsley
- 2 tbsp chives
- 4 sprigs Mint
- 4 sprigs tarragon
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 5 tbsp olive oil
- 2 tbsp butter
- Sea salt
- pepper (from grinder)

Wash and pat dry herbs, remove leaves from stems. Roughly chop and mix with chives, vinegar, and olive oil. Season with salt and pepper and let rest.

Wash and pat dry cod fillets. Season with salt and pepper. Cook in not-too-hot butter for about 3-4 minutes per side until golden brown. Place on preheated plates, taste the vinaigrette, pour over fish, and serve.
