Cod with Garlic Mashed Potatoes and Green Marinade

Ingredients
- 750 g waxy potatoes
- 4 cloves of garlic
- Salt
- 125 ml milk
- 2 tbsp butter
- Pepper (freshly ground)
- 1 handful flat-leaf parsley
- 1 sprig mint
- 2 tbsp almonds
- 1 tsp sharp mustard
- 75 ml olive oil
- Salt

- 4 cod fillets (about 180 g each)

Instructions

Peel the potatoes and garlic, then boil the potatoes in salted water for about 30 minutes. Add the garlic during the last 10 minutes.

Preheat the oven to 160°C with fan and top heat.

For the sauce, rinse and dry the parsley and mint, then blend them with almonds, mustard, and olive oil until smooth. Season with salt and pepper.

Rinse and dry the cod fillets, season with salt and pepper, drizzle with olive oil, and place on a parchment-lined baking tray. Bake for about 10 minutes.

Drain the potatoes and garlic, let them steam off, then mash with a potato masher adding hot milk and butter until smooth. Season with salt and pepper and divide onto plates.

Wash, dry, and shake the arugula. Sprinkle over the mashed potatoes and top each plate with a cod fillet. Drizzle with sauce and garnish with lemon wedges.
