Coconut Spinach Soup Basic Recipe

This basic recipe for coconut spinach soup is easy to prepare and makes a perfect lunch.
Ingredients
- 600 g Spinach
- 2 onions
- 1 Garlic clove
- 1 red chili pepper
- 20 g butter
- 600 ml Vegetable Broth
- 300 ml coconut milk
- 100 ml heavy cream
- Salt
- Cayenne pepper
- 2 tsp Curry powder
- a splash of lemon juice

Wash, trim and dry the spinach, then cut into thin strips. Peel and dice the onions and garlic. Wash the chili, halve it lengthwise, remove seeds and finely chop.

Heat butter in a pot. Add onion, garlic and chili and sauté until translucent over medium heat. Add spinach and deglaze with broth and coconut milk. Stir in cream and simmer over medium heat for about 10 minutes. Season with salt, cayenne pepper, curry powder and a splash of lemon juice to taste. Ladle the soup into bowls and serve.
