Tomato Salad with Arugula

Ingredients

  • 200 g arugula
  • 150 g cherry tomatoes
  • 4 tbsp olive oil (≈40 ml)
  • 2 tbsp balsamic vinegar
  • Salt
  • black pepper (freshly ground)
  • 100 g parmesan cheese (chunk)

Instructions

    Trim the stems from the arugula, wash thoroughly and dry by spinning. Wash the cherry tomatoes, pat them dry and halve them. Whisk together olive oil, balsamic vinegar, pepper and salt to make a vinaigrette, then toss with arugula and tomatoes.

    Plate the tomato salad with arugula on bowls or plates. Shave parmesan cheese and sprinkle over the top.
