Ingredients

  • 2 medium zucchini
  • 200 g Cream cheese
  • 1 red chili pepper
  • 2 tsp chopped rosemary needles
  • black pepper (coarsely ground)
  • whipping cream

Instructions

    Slice the zucchini lengthwise into thin slices or shave them. Blanch in boiling salted water for 1 minute, drain, shock with ice water and let dry.

    Whisk the cream cheese with enough whipping cream to form a spreadable mixture.

    Wash the chili pepper, cut it lengthwise, remove seeds, discard the white membrane, and finely dice. Mix goat cheese with chili, rosemary, and pepper. Pat zucchini slices dry, apply some cream mixture, roll them up, and secure with toothpicks.

    Serve garnished with rosemary.
