Ingredients
- 400 ml coconut milk
- 150 ml milk
- 2 tbsp sugar
- 1 tbsp sugar
- 0.5 lemongrass
- 150 g milk rice
- 1 Pomegranate
- 1 tbsp chopped pistachios
Instructions

Add the coconut milk, milk, vanilla sugar, sugar and pressed lemongrass to a pot. Bring to a boil and stir in the rice. Simmer gently covered for about 25 minutes until it has absorbed and thickened. Stir occasionally and add more milk if needed.

Press the pomegranate around, halve it and tap out the seeds. Fold half of the seeds into the rice at the end, remove the lemongrass again and divide among glasses. Sprinkle with remaining pomegranate seeds and pistachios before serving.
