Ingredients

  • 1.5 cm fresh ginger
  • 75 g dark chocolate (at least 70% cocoa content)
  • 75 g soft butter
  • 2 Eggs
  • 60 g sugar
  • 40 g flour
  • candied ginger for garnish

Instructions

    Preheat the oven to 170°C (325°F) with upper and lower heat.

    Peel and finely grate the ginger. Roughly chop the chocolate and melt it together with the butter over a hot, non-boiling water bath; set aside and stir in the grated ginger. Beat the eggs with the sugar until light and frothy. Fold this into the cooled chocolate mixture and gently fold in the flour.

    Fill well‑buttered and floured ramekins (about 8 cm diameter) or small cups with the batter and bake for about 15 minutes. The cakes should remain slightly liquid inside. Remove from oven, carefully lift them out of the molds, and sprinkle with candied ginger before serving.
