Chocolate Mousse with Pomegranate Seeds

Ingredients
- 150 g dark chocolate
- 20 ml rum
- 2 very fresh eggs
- 40 g sugar
- 2 Tbsp grenadine
- 125 ml whipped cream (well chilled)
- grated chocolate
- 1 Pomegranate (seeds)

Coarsely chop the chocolate and melt it over a hot water bath with the rum. Remove from heat. Separate the eggs; beat the whites with the sugar into stiff peaks. Whisk the yolks with the syrup over a hot, non-boiling water bath until the sugar dissolves. Remove from heat again. Beat the cream to stiffness. Add the chocolate to the yolk mixture and stir in with a whisk. Chill in a cold water bath. Fold the whipped cream onto the chocolate mass and mix quickly with a whisk. Gently fold in the meringue and pour the mousse into glasses. Refrigerate for at least 3 hours.
