Ingredients

  • 1 Carrot
  • 1 tbsp grated ginger
  • 80 ml milk
  • 1 tbsp butter
  • 80 g flour
  • 2 Eggs
  • 200 g ricotta
  • Salt
  • ground pepper

Instructions

    Peel the carrot and finely chop it. Blanch briefly in salted water, shock in ice water, then drain.

    Bring milk and butter to a boil, whisk in flour until a thick base forms. Pour into a bowl, beat in eggs, then fold in ricotta, ginger, and carrot. Season with salt and pepper and let cool.
