Walnut Banana Cake

Ingredients
- 250 g bananas (about 2-3 pieces)
- 300 g soft butter
- 200 g sugar
- 1 pinch salt
- 4 eggs
- 400 g spelt flour
- 50 g starch
- 1 packet baking powder
- 100 g ground walnuts
- 50 g chopped walnuts
- 50 ml milk (add more if needed)
- 2 tbsp powdered sugar (for dusting)

Line a springform pan with parchment paper. Puree the banana flesh in a blender until smooth. Beat the butter with an electric mixer until creamy, then gradually fold in sugar and salt until fully dissolved. Add eggs one at a time, beating for about 5 minutes until frothy.

Fold in the banana puree. In a separate bowl whisk together spelt flour, starch, baking powder, ground walnuts and chopped walnuts. Alternately stir the dry mixture with milk into the egg batter until a smooth dough forms that falls off the spoon without tearing. Add more milk if needed to reach the right consistency.

Pour the batter into the prepared pan and bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for 45-50 minutes. Test with a skewer. Once baked, remove from the oven, transfer the cake onto a cooling rack and let it cool completely. Slice and dust with powdered sugar before serving.
