Coconut Rice Pudding with Exotic Fruits

Ingredients

  • 1 Lime
  • 200 ml milk (1.5% fat)
  • 250 ml coconut milk (9% fat)
  • Pinch of salt
  • 1 tsp yogurt butter
  • 40 g sugar (2 tbsp)
  • 125 g rice grains
  • 1 Banana
  • pineapple
  • papaya
  • Mango

Instructions

    Wash the lime hot, grate its peel and squeeze out the juice.

    Add milk with coconut milk to a pot. Add pinch of salt, yogurt butter and sugar; bring to a boil while stirring occasionally. Add rice grains to the boiling liquid and stir once until it briefly boils again. Reduce heat to lowest setting, cover the pot and let the rice soak for 30–35 minutes; add more milk if needed. Then stir in 1 tsp lime zest.

    While the rice cooks, peel the fruits; cut the pineapple core out, pit papaya and mango. Cut fruits into pieces or slices and arrange decoratively on plates.

    Drizzle lime juice over the fruit. Distribute the finished rice over it and serve.
