Lime Cream in Indonesian Style

Ingredients

  • 5 limes
  • 10 sheets gelatin
  • 80 g sugar
  • 2 egg yolks
  • Lime slice
  • mint

Instructions

    Grate the zest of 2 limes, then juice all fruits. Soak gelatin in cold water. Bring 800 ml water with lime juice and half the sugar to a boil, remove from heat, let cool slightly, and dissolve the strained gelatin into it. Stir over a cold water bath until the mixture slowly begins to gel.

    Whisk the egg yolks with the remaining sugar over a hot water bath until frothy, add the grated zest and beat until cold. Then fold in the cooled liquid. Transfer to a bowl, cover, and refrigerate for at least 3 hours until set. Serve by scooping with a spoon and garnishing with mint and lime slices.
