Ingredients
- 200 g kumquats
- 2 organic oranges (juice)
- 2 tbsp butter
- 0.5 tsp ground coriander
- 1 Papaya
- whipped cream

Wash kumquats, pat dry and cut into small cubes. Heat butter in a pan and sauté the kumquat cubes for about 3 minutes while stirring. Pour in orange juice and season with coriander, let it reduce slightly, then remove from heat and allow to cool to lukewarm.

Halve the papaya, remove seeds and peel. Cut the halves into wedges. Arrange the compote on a plate, place the papaya wedges on top, and add a dollop of whipped cream for each serving.
