Ingredients
- 1 onion
- 1-2 green peppers
- 2 stalks lemongrass
- 2 handful coriander leaves
- 2 handful mint leaves
- 400 ml coconut milk
- 50 ml instant vegetable broth
- salt, freshly ground pepper

Peel and finely chop the onion. Slice the peppers, remove seeds, and finely dice the pods. Finely chop the lemongrass. Roughly blend the prepared ingredients with the herbs in a blender.

Add coconut milk, vegetable broth, and the pepper-herb mixture to a pot, stir, and simmer for 20-25 minutes over medium heat until reduced by about half. Season with salt and pepper to taste. Transfer to a glass or bottle and seal tightly.
