Ingredients
- 750 g lamb kidney
- black pepper
- 3 cloves garlic
- 1 small green chili pepper
- 3 tbsp oil
- Salt
- 3 tbsp Lime juice
- 1 tsp sumac
Instructions

Place kidneys in cold water for 2 hours. Then pat dry, cut lengthwise in half and remove fat, sinew and tubes. Slice the kidney halves into strips and season with pepper.

Peel garlic cloves and slice thinly. Split the chili pepper, scrape out seeds, rinse, and cut into fine rings.

Heat oil in a pan. Sauté garlic and chili rings. Add kidneys and cook for 5-6 minutes while turning. Transfer to preheated plates, salt, drizzle lime juice, and sprinkle sumac.
