Ingredients

  • 50 g Raisins
  • 3 tbsp Marsala (or Sherry)
  • 1 onion
  • 1 Garlic clove
  • 3 tbsp oil
  • 1 star anise
  • 1 small cinnamon stick
  • 1 tsp turmeric
  • black pepper
  • 200 g rice (Himalayan)
  • Salt
  • pine nuts
  • 1 Pomegranate
  • mint

Instructions

    Soak raisins in Marsala. Peel and finely dice the onion and garlic. Heat oil in a pot. Sauté onion, garlic, and spices for about 2 minutes. Stir in rice and add 400 ml water. Bring to a boil and let it simmer for 1 minute. Turn off the heat and allow the rice to rest for about 15 minutes.

    Toast pine nuts in a dry pan until fragrant. Cut the pomegranate open and remove the seeds. Mix raisins into the rice and let sit briefly. Gently fold in pine nuts and pomegranate seeds. Garnish with mint leaves before serving.
