Ingredients
- 4 egg whites
- Pinch of salt
- 2 tsp lemon juice
- 225 g powdered sugar
- 250 g shredded coconut
- 1 tbsp flour
Instructions

Beat the egg whites with salt and lemon juice until stiff peaks form. Gradually sift in the powdered sugar, beating to a stiff consistency. Fold in the shredded coconut and flour until evenly incorporated.

Preheat the oven to 150 °C (302 °F) with both fan and top heating.

Fill a piping bag fitted with a star tip with the dough and pipe small mounds onto parchment‑lined baking trays, spacing them apart. Bake in the preheated oven for 20–25 minutes until golden brown.

Remove from the oven, carefully lift the cookies off the tray, and allow to cool completely.
