The cookie mix for pastries by Spoonsparrow is ideal for gifting, e.g., during Advent.

Ingredients

  • 175 g spelt flour type 1050
  • 1 tsp Baking powder
  • 50 g cocoa powder
  • 125 g Brown sugar
  • 4 tbsp Coconut flakes
  • 4 tbsp chopped hazelnuts
  • 150 g cold butter
  • 1 egg

Instructions

    Mix flour with baking powder, cocoa powder, brown sugar, coconut flakes and nuts. On a work surface form a mound and press a well in the center.

    Cut cold butter into cubes and spread over the rim. Pour the egg into the well and quickly knead everything by hand into a smooth dough.

    Shape the dough into a roll about 5 cm in diameter, wrap it in foil and refrigerate for 30 minutes.

    After chilling unwrap the dough and cut it into slices about 1 cm thick with a large knife. Place on a baking sheet lined with parchment paper.

    Bake in a preheated oven at 220 °C (fan 200 °C; gas: level 4) for 10–12 minutes. Remove cookies from the oven and cool them on a wire rack.

    For gifting, layer all dry ingredients in a glass jar, seal tightly and attach this recipe.
