Ingredients

  • 200 g soft butter
  • 80 g sugar
  • 1 packet vanilla sugar
  • 1 tsp finely grated citrus zest (from 1 organic orange)
  • 300 g flour
  • 1 tsp Baking powder
  • 100 g crème fraîche
  • 100 g soft marzipan paste
  • 50 g sifted powdered sugar
  • 1 egg white (M)
  • 1 tbsp orange liqueur
  • 100 g dark chocolate couverture

Instructions

    Beat butter until creamy. Gradually fold in sugar, vanilla sugar and citrus zest. Mix flour with baking powder and alternately fold half of it into the mixture with crème fraîche. Finally knead in the remaining flour. Wrap dough in cling film and chill for about 1.5 hours.

    Roll out dough to a thickness of about 2 cm and cut into pieces roughly 2.5 cm long. Roll each piece into a ball weighing about 15 g. Place on baking trays lined with parchment paper. Press a shallow indentation into each ball using the handle of a cooking spoon. Keep trays cool.

    Divide marzipan into small pieces, whisk together with powdered sugar, egg white and orange liqueur until smooth. Fill the indentations with this mixture. Bake in a preheated oven at 175°C (gas: level 2-3, convection: 160°C) for about 15–18 minutes. Let cool.

    Cut couverture into pieces, melt over a double boiler, let it cool to warm hand temperature and fill a piping bag with a fine tip. Decorate the cookies with the chocolate. Allow the coating to set.
