Marzipan cookies

Ingredients
- 400 g marzipan base
- 1 untreated orange
- 200 g powdered sugar
- 1 egg
- 20 cocktail cherries (from jar)
- parchment paper (for baking sheet)

Cut the marzipan into smaller pieces. Wash, dry and finely grate the zest of the orange. Knead the zest with powdered sugar into the marzipan.

Roll the dough between plastic wrap to a thickness of 4-5 mm. Cut out hearts, stars or circles. For half of the cookies cut a small circle in the middle. Preheat the oven. Line a baking sheet with parchment paper.

Separate the egg yolk and whisk the whites. Place the dough discs on the sheet without holes and brush lightly with beaten egg white. Lay one dough ring on top, press gently. Use a wooden skewer to imprint fine patterns.

Whisk the yolk and brush the cookies with it. Bake at 220°C (200°C fan) for 2-4 minutes until browned. Remove from sheet, place one cherry in the center of each cookie and let cool.
