Citrus fruit salad with avocado and almond flakes

Ingredients

  • 2 tbsp almond flakes
  • 2 stalks celery
  • 40 g green olives (pitted)
  • 3 oranges
  • 1 pink grapefruit
  • 1 chicory
  • 1 Avocado
  • 2 tbsp olive oil

Instructions

    Toast the almonds in a dry skillet until golden brown and fragrant, then transfer to a bowl to cool.

    Wash, trim, and slice the celery into thin strips. Slice the olives into rounds.

    Squeeze one orange for juice. Peel the remaining oranges thoroughly, removing all white pith, segment them, and cut into pieces. Repeat with the grapefruit.

    Separate the chicory leaves, remove the stem, wash, dry by shaking or spinning, then cut into ribbons.

    Peel the avocado, remove the pit, dice finely, and mix immediately with the orange juice in a bowl.

    Add all prepared salad ingredients to the bowl, drizzle olive oil, and gently toss to combine.
