    Wash, clean the chicory stalks, cut off the wedge-shaped base and arrange the outer leaves star‑shaped on plates. Slice the remaining leaves into fine strips. Peel the avocado, halve it, remove the pit and cut into thin slivers. Drizzle immediately with 1 tbsp lemon juice. Peel the orange thickly, removing all white membranes, then cut along the segments to extract the fillets, catching any released juice. Arrange the avocado and orange fillets decoratively on the chicory leaves and sprinkle with the chicory strips.
