Ingredients

  • 1 chicory
  • 1 bundle watercress
  • 1 handful small parsley
  • 1 orange
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Orange juice
  • 3 tbsp oil

Instructions

    Separate the chicory into leaves, wash, trim, dry and cut smaller if needed. Rinse the watercress, trim, shake dry and pluck small pieces, removing tough stems.

    Peel the orange with a sharp knife, remove the white pith. Separate the fruit segments from the membranes, catch the released juice and squeeze the remaining pulp by hand.

    For the dressing whisk vinegar with orange juice and the collected juice plus oil until well combined. Season with salt and pepper to taste. Toss chicory with watercress, orange segments and parsley, arrange in a bowl and pour the dressing over it.
