Ingredients

  • 1 head of cabbage
  • 1 bunch radishes
  • 1 bunch Wild garlic
  • 2 chicory heads
  • 1 Spring onion
  • 1 clove garlic
  • 2 tbsp white wine vinegar
  • 1 tsp maple syrup
  • Salt
  • pepper (ground)
  • 4 tbsp hazelnut oil

Instructions

    Wash and dry the salad, tear into bite‑size pieces. Wash, trim and slice radishes into thin sticks. Wash wild garlic, cut into fine strips, set aside about 3 tbsp. Halve chicory, remove stems, discard outer leaves, wash remaining leaves and drain. Trim spring onion, wash and slice into thin rings.

    Finely chop the garlic and remaining wild garlic strips, place in a bowl, whisk with vinegar, maple syrup, salt and pepper, then fold in the oil and taste.
