Ingredients
- 2 chicories
- 3 oranges
- 1 Orange (juice)
- olive oil (cold pressed)
- 1 lemon (juice)
- 2 tbsp pine nuts (roasted)
- 1 small red onion
- 1 tbsp black olives (pitted, sliced)
- cardamom
- Salt
- pepper (ground)
Instructions

Remove the leaves from the chicory, wash them, gently pat dry and place on a large platter. Peel the oranges thoroughly (remove all white membranes), catch the released juice and slice into rounds.

Arrange the slices over the chicory leaves. Peel the onion and cut into thin rings, distribute over the orange slices. Whisk 4-5 tbsp olive oil with lemon juice, orange juice (including the captured), salt, pepper and ½ tsp cardamom powder.

Spoon the vinaigrette over the filled chicory leaves, sprinkle with pine nuts and olive slices, and serve immediately.
