Cinnamon Stars with Nuts

- 3 egg whites
- 1 tsp lemon juice
- 300 g powdered sugar
- 400 g ground almond kernels (add more if needed)
- 1 tsp cinnamon
- 10 ml kirsch
- sugar (for work surface)

Beat the egg whites with lemon juice until stiff. Gradually add sugar, continuing to beat until the mixture glows and forms peaks. Set aside 1 cup of meringue for the glaze.

Add almonds, cinnamon, and kirsch to the meringue, knead quickly. The dough should be pliable but not too firm. Cover and refrigerate about 1 hour.

Preheat oven to 150°C (300°F) with top and bottom heat. Line baking sheets with parchment paper.

Dust a work surface with sugar, roll out dough to 1 cm thickness, cut star shapes, place on sheet. Brush stars evenly with reserved meringue glaze and bake in preheated oven for 10-15 minutes. Stars should remain slightly soft inside and stay as white as possible. Cool on a wire rack.
