Ingredients
- 500 g ground almonds
- 5 egg whites
- 450 g powdered sugar made from birch sugar
- 2 tsp Cinnamon
- 1 Organic lemon
Instructions

Beat egg whites until stiff, fold in powdered sugar.

Set aside 1 cup of the meringue for glaze. Rinse lemon hot, pat dry, grate zest and squeeze juice. Add almonds, cinnamon, lemon zest and 2 tbsp juice to the meringue, quickly knead and cover dough; refrigerate about 1 hour.

Roll dough on a work surface to ~4 mm thickness, cut stars of various sizes and coat evenly with glaze. Place on parchment-lined baking sheet.

Bake cinnamon stars in preheated oven at 160 °C (fan: 140 °C; gas: level 1–2) for about 8 minutes; stars should remain soft inside and keep a white surface.
