Ciabatta with Turkey Breast and Rocket

Ingredients

  • 4 turkey breast fillets (≈100 g)
  • 1 tbsp Olive Oil
  • Sea salt
  • Pepper (freshly ground)
  • a handful rocket
  • a handful watercress
  • 4 ciabatta rolls
  • 2 tbsp Pesto Rosso
  • 1 tbsp tapenade
  • fresh grated cheese (e.g., Pecorino)

Instructions

    Rinse the turkey breasts, pat dry and cook in hot oil in a pan for 6‑8 minutes on each side until slowly golden brown. Set aside to rest.

    Rinse the rocket and watercress, spin dry, trim if needed. Horizontally halve the rolls and top with half of the salad. Slice the turkey breast, season with salt and pepper, and place on the salad. Drizzle a little pesto and tapenade over it and sprinkle cheese. Spread the remaining salad on top and close with the roll lid.
