Seitan-Steak Sandwiches

Ingredients
- 1 tbsp Maple Syrup
- 2 tbsp Soy sauce
- 3 tbsp Lemon juice
- 4 seitan steaks (about 150 g each)
- 2 bell pepper halves (red and yellow)
- 0.25 Cucumber
- 100 g smoked tofu
- 1 Avocado
- 1 tbsp chives sprigs
- Salt
- pepper, freshly ground
- 2 tbsp Vegetable oil
- 4 ciabatta rolls
- 30 g chopped hazelnuts
- 4 tbsp vegan barbecue sauce

Whisk maple syrup with soy sauce and 2 tbsp lemon juice and brush the mixture over the seitan steaks. Let marinate for about 10 minutes.

While marinating, prepare salsa: wash, halve, peel, and finely chop bell peppers; wash, peel, split, seed, and dice cucumber; cube smoked tofu; pit and mash avocado with a fork. Combine all ingredients with chives sprigs and 1-2 tbsp lemon juice. Season with salt and pepper.

Heat a skillet with vegetable oil and sear the steaks on both sides for 2-3 minutes until golden brown.

Halve ciabatta rolls horizontally and toast cut surfaces as desired. Spread salsa on the bottom halves, sprinkle hazelnuts, place seitan steaks on top, drizzle with barbecue sauce, cover with the other halves, and serve.
