Ingredients

  • 250 g mascarpone
  • 3 tsp gingerbread spice
  • 3 sheets white gelatin (ca. 6 g)
  • 0.5 tsp cinnamon
  • 150 g liquid honey
  • 250 g whipping cream
  • dark and light chocolate couverture (20 g each)
  • 4 very small mandarins

Instructions

    Whisk mascarpone with honey, then fold in gingerbread spice and cinnamon. Soak gelatin in cold water, then dissolve it in a little warm water over low heat, stirring into the cream. Beat whipping cream until stiff peaks form, then gently fold into the mixture. Shred dark and light chocolate into flakes, sprinkle on top and garnish with mini mandarins.
