- 150 g speculaas cookies
- 4 egg yolks
- 100 g sugar
- 50 g vanilla sugar
- 100 ml apple juice
- 400 g fresh whipping cream
- white chocolate shavings

Mix egg yolks with sugar, vanilla sugar, and apple juice in a stainless steel bowl; whisk over a gentle water bath until white and creamy. Then beat in a cold water bath to chill the mixture. Gently fold in crushed speculaas cookies. Whip the cream stiffly and fold it into the mixture. Pour the batter into a mold, smooth the top, and place it in the freezer overnight.
