- 500 g sweet cherries
- 250 g whipping cream
- 0.5 l milk
- 120 g ground almond kernels
- 4 eggs
- 120 g butter
- 120 g sugar
- 1 pinch salt
- untreated lemons
- powdered sugar

Grate lemon zest, pour milk into a pot, add half the lemon zest, pour in cream and simmer at medium heat for 30 minutes until reduced; remove from heat and cool. Beat eggs until homogeneous. Stir in almonds, a pinch of salt, sugar, and 110 g softened butter.

Brush a heart-shaped cake pan with remaining butter. Wash, pat dry, pit cherries, and spread on the bottom. Squeeze lemon, pour about 2 tbsp juice over cherries along with remaining zest. Spread the soft dough over cherries and bake at 180°C for 40 minutes. Let the cake cool slightly, transfer to a plate, and dust with powdered sugar.
