Christmas Cookies with Chocolate Filling

Ingredients
- 4 egg whites
- Pinch of salt
- 200 g sugar
- 50 g powdered sugar
- 350 g ground almond kernels
- 2 drops bitter almond aroma
- 250 g milk chocolate couverture (cocoa content 35%)
- 5 tbsp whipping cream (min 30% fat)

Preheat the oven to 150°C (300°F) with upper and lower heat. Line baking trays with parchment paper.

Beat the egg whites with a pinch of salt until stiff peaks form. Gradually fold in the sugar and powdered sugar until the mixture is firm, glossy, and holds its shape. Gently fold in the bitter almond oil and almonds.

Drop small mounds onto the prepared tray using two teaspoons and bake for 15-20 minutes in the preheated oven. Remove from the tray with parchment paper and let cool completely.

Chop the chocolate couverture into small pieces, melt over a double boiler, then stir in the whipping cream. Brush half of the cookies on their underside with this filling and sandwich them together with the remaining half.
