Preserved Gooseberries

Preserved gooseberries taste great in creams as dessert or in pastry fillings. Try the recipe from Spoonsparrow.

Ingredients

  • 1 kg preserved gooseberries (green and red)
  • 200 ml dry white wine
  • 1 lemon (juice)
  • 1 vanilla pod
  • 4 tbsp Honey

Instructions

    Wash, clean, and drain the gooseberries. Bring the wine with 150 ml water, lemon juice, split vanilla pod, and honey to a boil. Add the gooseberries, bring back to a boil, then remove from heat.

    Remove the vanilla pod, fill well-rinsed jars with the compote, seal, and let cool. Store preserved gooseberries in a cool dark place.
