Ingredients
- 800 g mixed blackberries (red and yellow)
- 1 tsp butter
- 3 eggs
- Pinch Salt
- 3 tbsp honey
- 75 g spelt flour type 1050
- pinch cinnamon
- 150 g delicate oats
- 4 Tbsp chopped almonds
- 1 tsp powdered sugar from erythritol

Wash and dry the blackberries. Grease a baking dish with butter and spread the berries inside.

Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Whisk the yolks with honey until fluffy.

Combine flour, cinnamon, oats, and almonds; fold into the yolk mixture. Gently fold in the beaten egg whites and pour the batter over the berries. Bake in a preheated oven at 180 °C (160 °C fan) for 25–30 minutes until golden yellow. Remove, let cool slightly, dust with erythritol powdered sugar, and serve.
