Ingredients

  • 125 g butter
  • 125 g sugar
  • a pinch of salt
  • 1 egg
  • 220 g flour
  • 50 g cocoa powder
  • 1 tsp gingerbread spice
  • 1 tsp Baking powder
  • 120 ml buttermilk
  • 50 g melted dark chocolate
  • 200 g white couverture
  • 100 ml whipping cream
  • 100 g butter
  • powdered sugar
  • colored sugar stars

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat. Cream the butter, sugar, and a pinch of salt until fluffy, then beat in the egg. Whisk together flour, cocoa, gingerbread spice, and baking powder; alternately fold into the butter mixture with buttermilk. Finally stir in the melted chocolate.

    Fill a piping bag fitted with a large round tip and pipe 24 small dollops (about 3 cm diameter) spaced evenly onto a parchment-lined tray. Bake for 10–15 minutes until set. Remove, lift off the parchment, and cool on a wire rack.

    For the white filling, finely chop the couverture. Bring the cream to a boil, add the chocolate, and melt together. Let it cool until just thick enough to be spreadable. Beat the butter until fluffy, then fold in the chocolate mixture gradually. Pipe the filling into a piping bag. Spray half of the Whoopie Pies with the filling, place a matching pie on top, and press lightly.

    Brush the tops of each pie with remaining filling, dust with powdered sugar, and decorate with colored sugar stars.
