Chocolate, Vanilla, Strawberry Sandwich Ice Cream

A delicious snack on warm summer days: Try the sandwich ice cream with chocolate, vanilla, strawberry from Spoonsparrow!

Ingredients

  • 3 eggs
  • 100 g sugar
  • 60 g dark chocolate couverture
  • 500 g mascarpone
  • 1 vanilla bean (pulp)
  • 100 g Strawberries
  • 1 tsp lemon juice
  • 200 ml whipping cream
  • Eiswaffel (for serving)

Instructions

    Separate the eggs and whisk the yolks over a hot water bath with the sugar until pale and creamy (do not let it get too hot!). Remove about two-thirds of the mixture, fold in the chopped chocolate under the remaining portion and melt. Let cool (possibly in a cold water bath) and fold in one-third of the mascarpone. Allow the rest to cool as well and fold in the remaining mascarpone. Stir in half of the vanilla pulp. Wash, dry, and cut the strawberries into pieces; mash with lemon juice using a fork until fine. Fold this into the remaining cream. Whip the cream and egg whites stiffly, then fold one-third each into the chocolate, vanilla, and strawberry creams respectively. Spoon each ice cream into shallow dishes and freeze for at least 3 hours, stirring vigorously every 30 minutes.
