Ingredients

  • 3 large eggs
  • 100 g sugar
  • 1 packet vanilla sugar
  • 120 g flour
  • 1 tsp Baking powder
  • 4 tbsp hot water
  • 3 egg yolks
  • 100 g sugar (more to taste)
  • 1 packet vanilla sugar
  • 20 ml amaretto
  • 10 ml brown rum
  • 250 g low-fat quark
  • 250 g mascarpone
  • 200 g whipping cream (or plant cream)
  • Amaretto (for seasoning)
  • 1 cup strong coffee (large)
  • 30 ml amaretto
  • cocoa powder (dark, for dusting)

Instructions

    Separate the eggs and beat the egg whites with half of the sugar until very stiff. Beat the yolks with water and remaining sugar until fluffy; sift in flour and baking powder, then fold into the whites.

    Spread the batter onto a parchment-lined tray and bake at 180‑200°C for about 10 minutes until golden yellow. Remove from oven and let cool.
