Ingredients

  • 30 spoon biscuits
  • 200 ml brewed, cold espresso
  • 60 ml amaretto
  • 120 g dark chocolate
  • 5 egg yolks
  • 100 g powdered sugar
  • 8 sheets white gelatin
  • 750 g mascarpone
  • 200 ml whipping cream
  • cocoa powder (for dusting)

Instructions

    Place a 20×30 cm baking frame on a sheet of parchment paper.

    Mix the espresso with the amaretto and soak the spoon biscuits in it. Lay a layer of soaked biscuits as the base.

    For the filling, roughly chop the chocolate and melt it over a hot, non‑boiling water bath. Remove from heat and let cool. Whisk the egg yolks with powdered sugar over a hot, non‑boiling water bath until frothy. Soak the gelatin in cold water, squeeze out excess liquid, and stir into the yolk mixture. Remove from the water bath, allow to cool, then fold in the mascarpone. Finally whip the cream stiff and fold it together with the melted chocolate.

    Spread one third of the filling over the biscuits and cover again with soaked biscuits. Repeat this process once more and finish with a layer of filling. Chill for about 3 hours. Dust with cocoa powder and serve cut into portions.
